Cabernet Sauvignon 2018
A Cabernet Sauvignon for those seeking something a little more approachable, the push for increased fruit-weight is evident from the classic Cabernet nose (capsicum, cassis, chocolate, blackberry) on.
Fine tannin allows for a rich balance on the palate, where ripe blueberries and more winter berries play nice with spice and a good kick of acid. A big, generous wine that promises the excellent long-term maturation Conor sought in the making.

Winemaker Notes
It was a real privilege to work vintage 2018 with Peter after his retirement. It was a great opportunity: we tasted fruit together, decided harvest dates, and I learned his priorities and production methods. While Peter normally would have done his blends very early, we agreed that we would hold the batches in oak separately while he was away. On his return from Switzerland, we went through the collection of components and Peter was the primary decision-maker for the 2018 blends. My contribution was to bring in some new oak components which historically weren’t used. I also pushed fermentations to have a little more fruit weight. Coupling that with a softer, riper tannin profile, I also made the decision to bottle the wine a little earlier than normal, to preserve that fruit weight. Stylistically, I think this wine shows the more approachable side of Stoney vineyard. It’ll drink very well on release but will certainly mature in bottle for many, many years.
